Cinnamon-y Bananas • RECIPES JUST RIGHT FOR THE LITTLEST COOKS

Overnight Oatmeal With Nut Butter anD Honey • Overnight oatmeal makes a great breakfast for several reasons: It takes almost no work, and it’s creamy, delicious, and endlessly adaptable. It will sustain you until lunch thanks to its high fiber, and it has lots of important vitamins and minerals (including manganese, phosphorus, copper, B vitamins, iron, selenium, magnesium, and zinc). And the best-kept secret: It makes a great bedtime snack because of its high magnesium and melatonin content, both of which help with better sleep.

Fluffy MixeD-Grain PanCakes • These pancakes are thick and fluffy, but if you prefer thinner pancakes, add a little more buttermilk. We love the flavor that comes from varying the grains, but if you prefer more traditional pancakes, you can substitute more flour for the cornmeal and oats. On the other hand, if you have other grains available—wheat germ, wheat bran, ground flaxseed, just to name a few—experiment by replacing 1 tablespoon of the flour with any of those. Your pancakes will not only be even healthier, they will also taste great.

PiCkly Tuna SalaD • Pickles are very popular now and are showing up in all sorts of recipes and foods. They’re actually a classic addition to tuna salad, and if you’re a pickle lover, feel free to double the pickles in this recipe (and if you’re not, substitute cucumber).

Congee • Congee is the Chinese name for a savory porridge-like soup. A similar Korean dish is called juk. Both are made with rice that sort of explodes as it cooks, and while that may sound strange, it’s delicious. In China they eat it for breakfast, but with add-your-own toppings, it also makes a substantial dinner.

WHAT’S DIFFERENT

Focus on the Main

Mushroom-StuffeD RoasteD Peppers • Stuffed peppers are most often filled with beef and rice. We wanted a version to make meat eaters, vegans, and vegetarians happy and we think this recipe fits the bill. The stuffing itself is great on its own, either hot or cold, or used to fill hollowed-out tomatoes (and cooked the same way).

FiDeO SeCO • What really sets fideo seco apart from traditional spaghetti with tomato sauce is the way that it’s cooked. Instead of cooking the noodles in water and then topping them with tomato sauce, the noodles are cooked in the tomato sauce. As a result, the noodles are completely covered in sauce, so the flavor and color are much richer. And of course, breaking up the spaghetti is super fun.

CrunChy ChiCken Thighs • This really easy but flavorful dinner can be assembled quickly, transferred to the oven, and cooked while you set the table and prepare your sides.

Skillet Lasagna • We love lasagna but sometimes don’t have the time or energy for all those layers. Skillet lasagna is fuss-free: Instead of carefully layering pasta, sauce, and cheese, you simply slip the noodles into the sauce and then top with cheese. Be sure to keep the heat low so that the noodles cook through without burning on the bottom.
